Kitfo is Ethiopia's most celebrated dish, and Mesob's version is the one guests come back for. Lean beef is minced by hand until silky, then folded through mitmita — the hottest of Ethiopia's chilli blends — with melt kibe (spiced clarified butter) and korerima, the fragrant black cardamom that gives kitfo its unmistakable perfume. Served with freshly made injera, and best with a scoop of ayib alongside.

About Our Kitfo

Kitfo comes from the Gurage people of central Ethiopia and has become the country's best-known dish. The beef is trimmed of every scrap of fat and minced very fine, then warmed gently through melt kibe so the butter carries the spice into the meat rather than sitting on top of it.

At Mesob we mince to order and season with mitmita and korerima ground in-house, so the heat arrives with real depth behind it rather than raw chilli burn. Order it leb leb (lightly warmed) or fully cooked, and add ayib — our fresh Ethiopian cottage cheese seasoned with kale and mitmita — to cool each bite. Dulet Kitfo and Special Kitfo are on the menu too if you want to go further.
