At Mesob we build ours from finely milled chickpea flour, whisked slowly into caramelised onion, garlic and a measured amount of berbere until it thickens into a smooth, glossy stew.
Tegabino means it arrives at the table still bubbling in a black claypot, which keeps it hot right through the meal.
